餡料快速水分儀(yi)用法:
1、儀(yi)器開機后,先按照(zhao)說明書的要求,把(ba)儀(yi)器預熱30分鐘;
2、把準備(bei)好的餡料(liao)用(yong)小(xiao)鐵(tie)勺子取樣(yang)(yang)到儀器里(li)面,處(chu)理(li)好樣(yang)(yang)品;
3、蓋(gai)上(shang)加(jia)熱(re)桶,按“開始測試(shi)"按鍵(jian),儀器(qi)燈亮開始工作;
4、儀器測試完自動報警,屏幕上直接顯示(shi)相關(guan)的水(shui)分值(zhi)及(ji)參數
水分對(dui)月(yue)餅的(de)影(ying)響:
月餅餡料現在有很多種,水(shui)分也不盡(jin)相同,不過(guo)大致都是在18%-24%之間,測試(shi)餡料水(shui)分早(zao)期(qi)是采用105度烘箱法(fa),此法(fa)需要(yao)干(gan)燥箱、天平、計算器等試(shi)驗器具(ju),操作過(guo)程(cheng)復(fu)雜、測試(shi)時間過(guo)長、效率低。測試(shi)一個(ge)樣品的(de)時間大概要(yao)4個(ge)小時,對于(yu)(yu)炒制(zhi)餡料來說,這個(ge)時間過(guo)于(yu)(yu)太長,無法(fa)形成大規模的(de)工藝生產。目前月餅餡(xian)料現行的國家標(biao)GB/T 21270-2007食品餡料標準;GB/T 21270-2007食品餡料標準于2007年12月4日由中華人民共和國國家質量監督檢驗檢疫總局和中國國家標準化管理委員會聯合發布,于2008年5月1日正式實施,同時替代了原中華人民共和國國家經濟貿易委員會2001-12-28發布2002-04-01實施的SB 10350-2002老版的月(yue)餅餡料標準。每(mei)一個可以(yi)在(zai)中(zhong)國國內銷售(shou)(shou)的月(yue)餅餡料生(sheng)產(chan)企(qi)業,都需要經過國家食(shi)(shi)品藥(yao)品監督局的生(sheng)產(chan)許(xu)(xu)可驗收,在(zai)通過生(sheng)產(chan)許(xu)(xu)可驗收,拿到糕(gao)點月(yue)餅餡料類(lei)食(shi)(shi)品生(sheng)產(chan)許(xu)(xu)可證后(hou),才可生(sheng)產(chan)銷售(shou)(shou)月(yue)餅餡料。
